Old Suffolk Strong Ale is a strong, rich flavoured beer with a woody character and a well balanced sweetness and hints of vanilla from its use of Boadicea hops. It brews at around 6.0% ABV and in addition to the 3kgs of Malt Extract, it has a sachet of Brewers Sugar to increase the alcohol strength to around 6.0% without using so much Malt Extract that it could potentially end up ruining the flavour balance and body of the beer.

Worked out a treat!!! Feckin strong stuff! I guess the hint is in the title. The instructions in the kit say you need two barrels with the second being for adding the Priming Sugar, but on the sound advice from Shane in The Homebrew Company I was able to get around this and just add the sugar to the bottles for secondary fermentation. Also I was able to use the Muslin Bag that came with the kit over the tap in the fermentation barrel to eek out that last few bottles. Managed to get 5 full bottles from below the tap by tipping the barrel forward and catching any heavy sediment in the muslin. Couldn't taste any difference between these and the others! This is one I would definitely buy again.
